Cellar reserve brews....

I've just returned from the most amazing trip...several weeks in Europe touring some of the finest beer (and wine) destinations in Germany, Belgium, Italy and more. This is the first extended vacation for us in many years. As a result, my one-man brewery has been idle for some time, and our inventory is wiped out. Sorry to say, that no Lawson's will be found on draft during the month of October.

The good news is that I will be brewing again tomorrow, and we'll be stocked again around the first of November with Sugarhouse IPA and Double Sunshine IPA close on its heels! In the meantime, I've decided to dip into my personal reserve of beer to offer a few choice gems at the Warren Store in bottle. This weekend (delivered Sat. PM) they have two cases of 12oz Oak-aged Fayston Maple Imperial Stout, hand bottled and wax-dipped, that sat in a somewhat miniature cask from Tuttletown (NY) distillery. Yum! Only six gallons made. I've also released the very last case for sale of our collaboration brew - Acer Quercus, done with The Bruery. For the next two weekends, I will be bottling up a vintage keg (1/2bbl) of Fayston Maple Imperial Stout that was brewed at the end of 2010 and cellar aged. It has really smoothed out, mellowed and emerged with a different depth and complexity than when this beer is young. There will be just a few cases of 750ml bottles for each weekend. I appreciate your patience and support.

  1. Sean, hope you had a great time in Europe. While you were gone I decided to become a homebrewer and fired up a batch of "First Date" Irish Stout with my wife. Don't think I'm ready to give Double Sunshine a run, so I look forward to picking up some next month.

  2. Nice Bill! Funny thing - my "first date" with my wife Karen involved some Irish Stout, Guiness on tap! Also, please note I've updated my post. I decided to do Sugarhouse IPA, instead of Chinooker'd

  3. Sean- Going to be in town from Atlanta this weekend and I'm glad I'm (hopefully-fingers crossed) going to be able to try some of your beers after hearing such great things. Thanks for pulling stuff out of your cellar! Will you be having both the Oaked Fayston and aged Fayston available this Saturday or just the Oaked (plus the Acer of course)? Thanks!

  4. To clarify - the Acer Quercus and 'oaked' FMIS was this past weekend (10/8) and is all gone :( The next two fridays 10/14 and 10/21 I'll be delivering just a few cases each week of cellar aged FMIS in 750ml bottles and nothing else (no oak, bourbon, or anything else)

    Hope you had a blast while in Europe. Was just curious what, if anything, you plan to make available during the first week in November. I'm flying from LA to Boston and would like to take one day to drive up to VT to taste/pick up some of your tasty brews I hear so much about. Fingers crossed about Double Sunshine and FMIS being available!

    Any update on the new 7bbl brewery (think I read about this in Yankee Brew news)? I noticed stock at the Warren store on a Tuesday and per customer limit changed from 2 to 4 so we're thinking you are up and running? Any pictures of the new setup? Thanks,
